    Redneck BBQ Lab

    North Carolina is all about its barbecue. The definition of barbecue is Redneck BBQ Lab. This is the place to go if you crave some good quality barbecue and mac n’ cheese. Redneck BBQ Lab is both a restaurant and a food truck decorated with many awards. Food truck or restaurant, either way, you will get the same quick, quality service and mouth-watering food, especially with the mac n’ cheese.

    At the Redneck BBQ Lab food truck, I had to try every mac n’ cheese on their menu, so I had: the Brisket Mac n’ Cheese, the “Lynny”, and their plain mac n’ cheese. Like other food trucks, I expected the food to come out in five minutes or longer, but not here, all three of my orders came out in less than a minute. I wasn’t sure whether my food came out that fast for a reason, but I was happy to get to eat my food right then and there at a perfect temperature.

    The Lynny

    It was a tough choice to pick which mac n’ cheese I would eat, so
    I tried them all. The first mac n’ cheese I tried was The Lynny. The Lynny is macaroni and cheese piled high with pulled pork. When I say “piled high”, I mean PILED; there was a ton of pork. The pork was a little too dry and very pulled. I easily resolved this issue by putting their delicious barbecue sauces on top. I also thought that there was almost too much meat on top, luckily, the mac n’ cheese had enough cheese so I was able to taste both the cheese and the meat at the same time. Having too much meat is also a good thing. Normally, food trucks would have you pay more for less meat. The cheese was queso, which doesn’t sound too good, but it was better than I expected. The cheese wasn’t spicy in your mouth until you swallow it. The golden cheese was super thick and creamy that I needed water to help it go down along with the soft, chewy noodles. If you cannot choose between pulled pork or mac n’ cheese, the Lynny give you the best of both worlds.

    Brisket Mac n’ Cheese

    The Brisket mac n’ cheese tasted good, but not good enough for my taste. The brisket with the mac n’ cheese tasted like pepperoni pizza, and I didn’t see very much brisket on top. If I had to, I would get this again, but only because of the deliciously baked skin on top and the chewy, gooey, soft cheese. Apparently, all mac n’ cheeses came from the same pan, but this mac n’ cheeses’ cheese was pale and had less queso flavor. I really liked how there was a rather large square of their sweet, fluffy, cake-like cornbread they added on the side.

    The Plain Mac n’ Cheese

    The Plain Mac n’ Cheese wasn’t the best, but it was very interesting. The cheese was smooth, soft, creamy, and very rich like your average cheese, but with a spicy twist. As I said many times before, Redneck BBQ adds queso to their mac n’ cheese, but this time the queso flavor is brought out even more! The Plain Mac n’ Cheese is the same mac n’ cheese as all the other mac n’ cheeses; However, this portion of mac n’ cheese had a thick layer of delicious, brown, baked cheese on top. I appreciated that this mac n’ cheese was baked when I ate the delicious, brown skin of chewy cheese off the top. This layer of cheese was so thick, chewy, and delicious that it made this mac n’ cheese very thick and rich-almost hard to swallow!

    In conclusion, when I swallowed the cheese I felt a little bit of a spicy tang of the queso in my throat. The golden cheese was super thick and creamy that I needed water to help it go down. Redneck BBQ had the most perfect portions for all of the mac n’ cheeses. The portions were enough to make you nice and full. Overall, if I were to pick one mac n’ cheese it would be The Lynny; it was loaded with pork and had a ton of mixed flavors. Even though this mac n’ cheese is my favorite, the other mac n’ cheeses were equally good.
